Properties:
Fructose or fruit sugar is a sweetener that can be used, like sugar, in the preparation of cakes, jams, jellies, compotes, ice creams, sweet sauces or juices, as well as for sweetening fresh fruit.
Fructose has an energy value equal to that of sugar, i.e. 4 Kcal/g, but a sweetening power of 1.5 - 1.8 higher than that of sugar. That's why you need about 40% less fructose than sugar, to get the same level of sweetness.
Due to the reduction in the amount used, you also reduce the number of calories consumed.
Warnings:
- Since fructose caramelizes faster than sugar, baked fructose products require a lower temperature, but a longer time than in the case of sugar products. The cakes obtained in this way maintain their tenderness for a longer time.
- The product is tolerated by people with diabetes, as part of a regimen plan, under the supervision of the doctor.
