Description
What is kefir?
Kefir, or kephir, originates from the nomadic inhabitants of the Russian steppes. It is a more or less frothy, creamy liquid with a pleasantly sour taste and a buttermilk-like aroma. Kefir is a fermentation process that transforms cooked cow's milk into kefir in an airtight container at a temperature of 13 to 20 degrees Celsius.
The use of kefir:
Kefir should ideally be consumed within 24 hours. If this isn't possible, it should be stored like fresh milk. Kefir can be eaten on its own or combined with other foods. It can be eaten with salads or fruit, or used in sauces.
