Yeast protein is characterized by high bioavailability . It has the highest score of 1 on the PDCAAS (Protein Digestibility Corrected Amino Acid Score) protein quality assessment method. This means that yeast protein is highly digestible and provides 100% of the essential amino acids required per unit of protein after digestion. Furthermore, the nutritional value and digestibility of yeast protein are equivalent to those of milk protein and significantly higher than those of plant proteins.
