THE SYMBOL OF PROVENCE Lavender, from a secondary shrub with a color between lavender blue and purple, is the symbol of Provence. It is grown at altitudes between 1000 and 1200 meters on sunny slopes, and in recent years also in Bulgaria, China, Ukraine and Canada. The hydrosol is extracted from the flowering tops of the plant by distillation and steam distillation. The scent and properties of Lavender were originally used in cosmetics, but are now also used in the food sector. It was once used to perfume and cleanse Greek and Roman baths, hence its etymology, Lavare: to wash. Purifies the body and soul.
