Buckwheat honey is considered the darkest of all honeys - it turns dark brown when exposed to light. It crystallizes very slowly, it also has a very intense and pleasant smell of buckwheat flowers and a characteristic taste: sharp, sweet and slightly burning. It contains compounds typical of buckwheat flowers, especially significant amounts of magnesium, iron and other bioelements such as: phosphorus, copper, zinc, boron, iodine, nickel and cobalt. It contains a large amount of vitamin C (2.9-11.9 mg%) and vitamins Bi, 62 and PP.
As a summer honey, it is rich in numerous enzymes (in terms of their content, it is considered the richest among Polish honeys), including ceamylase, invertase and phosphatase. Research conducted at the Institute of Apiculture in Puławy indicates that even after one year of storage of this product at room temperature, the activity of cc-amylase (diastase) is significantly above the norm (buckwheat honey retains high quality under the same storage conditions ).
Buckwheat honey is a rich source of vitamin C and rutin derivatives, including: rutosides, prevents its breakdown by oxidation and improves its absorption by the body. Contains a high magnesium content in an easily digestible form.
Buckwheat honey has an exceptionally high content of easily digestible iron, vitamin C and protein compared to plain honey.
