Pollen is the main source of protein for bees, in all its life stages, due to its high content of essential amino acids and its high digestibility (60%). As a beekeeping product, it is presented in the form of microscopic granules with a diameter of 2-3 mm. 30-50% of the collecting bees participate in its collection and the formation of the pollen tube takes place during the bee's flight.
The color of the pollen varies from white-yellow to tan-brown, according to the species of flower from which it comes and is due to carotenoid pigments and flavonoid compounds. Depending on the origin, the pollen can have a high biological value (willow, white and red clover, poppy, hawthorn, rose, etc.).
Amino acids are the basic constituents of proteins, and pollen contains around 21 amino acids (arginine, isoleucine, methionine, threonine, valine, histidine, tryptophan, etc.).
