Calpis – what is it?

In the early 20th century, a young Japanese entrepreneur, Kaiun Mishima, set off for mainland China in search of new trading opportunities. The journey proved to be much longer and more demanding than he anticipated. Exhausted and weakened, he regained his strength thanks to the local people in Inner Mongolia, who gave him a milk drink with a sharp, sour taste that they called "culture milk."

Upon returning to Japan in 1915, Mishima, inspired by the properties of this beverage, began researching its equivalent. After several years of work on fermentation using a strain of lactic acid bacteria, Lactobacillus, in 1919 he introduced Calpis ^® – the first Japanese fermented milk drink. Its name comes from the words "Calcium" () and the Sanskrit "sarpiṣ" (pungent). To this day, Calpis ^® remains an important part of the Japanese diet, produced according to an original recipe adapted to modern needs.
