Cacao Liquor is the brown substance produced by grinding cocoa beans or nibs. The natural cocoa butter that is in the beans melts during cooling so that the beans become a paste, which is called liquor. After cooling, gradually, the liquor will become solid at room temperature. To clarify, it does not contain any alcohol. Cocoa liquor is the precursor of chocolate, cocoa butter, cocoa powder and all other chocolate products. Of course, it can also be consumed as such, the taste being unsweetened chocolate. If you want to make your own chocolate at home, then you can start right from cocoa liquor, which you either grate or melt at a maximum of 45 degrees Celsius to keep all its nutrients intact. You can mix it with honey or agave nectar and you will have one of the best and healthiest chocolates you have ever eaten. Or you can add grated cocoa liquor flakes to the ice cream to make your straciatella!
