Rich in lipids, proteins and lecithin, this herbaceous plant bristling with reddish hairs is one of the best food supplements around, almost a food in itself.

Soy lecithin is a substance rich in essential polyunsaturated fatty acids (essential for the body), linoleic and linolenic acid. These substances have the ability to selectively bind to the cholesterol that accumulates in the blood, in particular to its harmful fraction, promoting its elimination and preserving the elasticity of the vascular walls. Soy lecithin is therefore particularly suitable for preventing the formation of atheromatous plaques (cholesterol-rich deposits on the internal walls of arteries), the cause of the widespread disease of atherosclerosis. Rich in choline and inositol, lecithins also play an important role in liver metabolism, favoring "good" cholesterol (HDL) over "bad" cholesterol (LDL). Taking lecithin is beneficial for patients suffering from gallstones. Lecithin, the main phospholipid of bile, keeps cholesterol in solution, avoiding the formation of precipitates.

Thanks to the high content of phospholipids, soy is also recognized as having excellent brain stimulation properties, in particular for acting on temporary memory problems.
