What are the properties and benefits of lentils?
- Benefits for the cardiovascular system: Regulates blood pressure and blood sugar levels (helping to treat type 2 diabetes). Reduces LDL ‘bad’ cholesterol and triglyceride levels, two risk factors for cardiovascular disease. May increase HDL ‘good’ cholesterol.

How many types of lentils are there?
There are several types of lentils. The seeds differ not only in colour (orange, green, dark green, brown), but also in size and cooking time.
Brown lentils are probably the most commonly used because they cook quite quickly, in around 20-30 minutes. They do not taste sweet or spicy.
Green lentils are mildly spiced and cook slowly. Rich in molybdenum, fibre and vitamin B9, they also contain protein, iron, phosphorus, potassium and vitamin B1.
Red lentils are also a good source of protein. They have a nutty flavour and are used in a variety of recipes, including purées and lentil soup. Red lentils do not need to be soaked before cooking.
Black lentils are low in fat but high in protein, iron and have a unique taste. Black lentils are used in salads, soups and side dishes.
Red or green lentils?
The difference between the two types of lentils is that red lentils take less time to cook (20 minutes) than green lentils (30 minutes).
Lentils or chickpeas?
Both types of legumes are rich in protein, minerals and fibre. Lentils are rich in fibre, minerals and vitamins such as iron, magnesium, phosphorus, folic acid and zinc. Chickpeas are also rich in fibre, vitamin C, B vitamins, magnesium, calcium, iron and manganese.
