Properties:
Forest honey is the only variety of honey that does not come from the nectar of flowers. This type of honey can come from the sweet secretions of trees.

In fir, pine, spruce, or even beech or willow forests, resins or certain sweet sticky substances flow on the trunk or leaves of these trees. These sweet substances are taken over by bees, especially in spring and autumn, when the flowers are few or offer little nectar. One reason why Forest honey is highly appreciated is the fact that it can be considered a cocktail of minerals.

The color of the honey is brown, with a greenish, reddish or pronounced blackish hue, depending a lot on the predominant tree from which the honey comes. The taste of forest honey is very different from the other varieties of flower honey, and due to the increased content of mineral substances that partly covers the sweet taste given by sugars, the taste of forest honey is specific, slightly caramelized.
