Recipe for gluten-free buckwheat pancakes: 100g of buckwheat flour, 80g of rice flour, 300ml of water (for more aromatic pancakes you can also use rice milk or cow's milk), 3 eggs, 1 pinch of salt , 1 pinch of nutmeg, 1 pinch of pepper, butter or oil. The flour, eggs, salt and spices are mixed with about half of the liquid with a whisk until homogenized, and then the rest of the liquid is added. The buckets can be baked in a pan over low heat on both sides to brown.
