Decaffeinated Lyophilized Soluble Coffee from Colombia. The process by which the Juan Valdez freeze-dried coffee is obtained is based on the dehydration of the coffee extract, using very low temperatures. This process allows the natural taste and aroma to be preserved. It is a sublimation drying process. This means that a substance, such as water, goes from a solid to a gas without going through the liquid phase.
