PDO (Protected Designation of Origin) extra virgin olive oil is made from a variety of olives called "Koroneiki" that thrives in the Messinian land. Distinguished by its fruity aroma of green olive fruits, it fulfills all the necessary processes of vertically integrated production from cultivation to storage. The cultivation, production, pressing and storage operations are carried out exclusively in the Messinian area. At all stages, special caution and care are required. The olives are in no case collected from the ground, but are transported in special, rigid, perforated plastic crates or bags made of plant materials. Transport and pressing must be carried out within 24 hours and kept in a shaded place. The production of PDO KALAMATA olive oil takes 4 to 6 weeks and this is exactly what makes it special. To the taste, it has a medium fruity aroma of green fruits, slightly bitter and slightly spicy to medium. It has the ideal balance according to the rules of tasting.
