What makes Manuka honey special?

Manuka Health honey, which comes from the indigenous territories of New Zealand, is produced in places that are a refuge of rare shrubs of the genus Leptospermum scoparium . These honeys are distinguished from traditional European honey by their taste, described by the producer as mineral and slightly bitter, a strong smell with notable notes of wet earth and heat, and the presence of Manuka bush pollen and methylglyoxal (MGO).
