These are compounds that, as natural pigments, give many plants and some animals their typical orange, yellow, or red color. Carotenes occur naturally in large quantities in carrots, spinach, cabbage, tomatoes, apricots, and papayas. Since the production of beta-carotene, a precursor of vitamin A, takes place exclusively in plants, it must be obtained through diet. Depending on the body's needs, beta-carotene can be converted into vitamin A.
