Penne with aubergines: here is a vegetable that has always existed!
Originally from Africa, the aubergine is thought to have been domesticated in India, from where it spread to China before making its way to the Arab world.
From there, it reached Spain in the 10th century before spreading throughout the Mediterranean basin.
Eggplants come in a wide variety of shapes and colors.
Don't hesitate to accompany them with a little parmesan!
Polenta with Celery and Salmon: Often avoided for its rustic appearance, this large root was nevertheless recognized by the Greeks and Romans as a symbol of beauty and joy!
It was called the Moon plant in homage to Selene, the goddess of our satellite.
Well prepared, it reveals its delicate and slightly peppery flavor and its creamy texture!
Pumpkin and bulgur tagine: native to Central America, pumpkin has been cultivated in Europe since the 16th century.
It is sometimes called pumpkin, although the latter is a less delicate and less sweet vegetable, used more often to feed livestock.
Some pumpkins can weigh up to 100kg!
In France, pumpkins are grown mainly in the south of the country, where they now occupy almost 4,000 hectares of cultivated land!
Risotto with courgettes and goat's cheese: although it is part of Mediterranean cuisine, courgettes are native to Central America, where they are thought to have been domesticated almost 10,000 years ago!
Green or sometimes yellow in colour, the courgette is actually a pumpkin harvested very young, well before maturity, hence the name, which is a diminutive form.
Contrary to popular belief, the courgette is a fruit in the botanical sense of the term: it contains the seeds of the plant!
