Properties:
Blue Spirulina is an extract of spirulina platensis. Phycocyanin, which has a blue color, is extracted from spirulina powder. Phycocyanin preserves the properties of spirulina, but it no longer has that predominantly fishy taste that spirulina usually has. For this reason, blue spirulina can be used as a natural pigment including in desserts and cakes, cocktails, juices.
