Erythritol has a unique structure with a glycemic index of zero. Our bodies accept it because we do not have enzymes that reject it. It does not cause digestive problems and does not have devastating metabolic effects, as is the case with excessive sugar consumption. It is found naturally in fruits, but is most commonly extracted from sweet corn.
What is Erythritol?
Erythritol is a natural sweetener with a sweetness 60-80% that of regular sugar. It has a refreshing, sweet taste. It retains its properties up to 160°C. It is largely absorbed by the body in the small intestine, which is why it does not cause bloating or have a laxative effect. Of the amount absorbed, more than 90% is eliminated from the body in an unaltered form within 24 hours. For this reason, its energy value is negligible.
It is found in the form of sweet, odourless, white powder or crystals. It dissolves in water in a proportion of 0.1 g/ml. The aqueous solution cools on dissolution, which gives it the refreshing character of chocolate and chewing gum. It is partially soluble in ethanol but insoluble in ether. It is resistant to both acidic and alkaline environments in the pH range 2-12. It can be easily used in combination with other sweeteners.
